Born to a Spanish/French mother and a first-generation American father (of Ukrainian and Irish heritage), Victor Garvey’s culinary journey spans some of the world’s most celebrated kitchens.

His career began in Barcelona, where he worked in the kitchen at El Bulli, before moving through two- and three-Michelin-starred restaurants across Spain. He later spent time in California at 1 Michelin Star Joe’s, Tokyo, in the kitchen of Noma Copenhagen (then ranked the best restaurant in the world), and took a chef position at Picasso in Las Vegas (2 Michelin stars) at the Bellagio Hotel, refining his expertise in modern-classical French cuisine.

Since moving to London, Victor Garvey has made his mark with SO|LA, earning a Michelin star for his Californian-inspired tasting menus. Yet his deep-rooted connection to French cuisine is in his DNA—his maternal grandmother, a personal chef for Charles de Gaulle after the war, first made her name in the French Resistance, where she played her part in the fight against the Nazis. She later opened a celebrated restaurant in Morocco, where her cooking became so renowned that de Gaulle himself enlisted her as his chef when in Africa.
